Simple lemon frosting

1 cup powdered sugar

1 tablespoon lemon juice

¼ cup butter (softened)

1-2 teaspoons lemon zest (finely grated peel)

1 tablespoon milk (optional)

Blend sugar, lemon juice, butter and lemon zest. Add milk and beat until frosting reaches desired consistency.

Lightly frost cooled cupcakes and refrigerate until picnic time.
